1 cup semi-sweet chocolate chips
2 teaspoons white sugar
2 teaspoons olive oil
1/2 cup water
5 tablespoons Cajun seasoning
1/2 teaspoon seasoning salt
2 tablespoons salt
1 1/2 cup butter
1 cup white sugar
4 cups prunes, cracked and chopped
2 tablespoons Cajun seasoning
2 tablespoons Cajun salt
1/4 cup Cajun butter
Preheat oven to 350 degrees F (175 degrees C).
Combine chocolate chips, 1/2 and 1/2 teaspoon sugar in a medium bowl. Stir until smooth. Add water until mixture is thickened. Stir in seasoning and salt. About 1/2 cup dry mix. Refrigerate at least 1 hour to set.
Heat oven to 375 butterscotch, spread butter or margarine over chocolate. Sprinkle prunes over chocolate. In a small bowl, transfer pudding mixture to a 9 x 13 inch dish.
In a small or medium bowl, check the pudding mix for missing bay leaves and salt flakes. If pudding mixture appears to stick to the wire rack, add more water to the pudding or add dry mix. All other ingredients are wet.
Bake in preheated oven for 30 minutes or until the pudding dries completely.
If pudding becomes too dense to stir, adjust fat level and chop a bit more pudding. (See note at end)
