1/2 cup pitted sliced portobello mushrooms
1/2 cup sliced mozzarella cheese
1 egg
honey/sour cream
4 cups precooked curry rice
1/2 cup finely shredded mozzarella cheese
Preheat oven to 350 degrees F (175 degrees C). Spread 1/2 cup of mushroom mixture evenly over bottom of 9 inch pie pan.
In a medium bowl, mix mushrooms, mozzarella cheese, egg, honey, and cream. Mix with hands. Pour mixture over mushroom layer.
Bake in preheated oven 30 minutes, or until golden brown and bubbly. Cool completely.
