Hot Chocolate II Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1 cup white sugar

2 eggs

1 teaspoon vanilla extract

1 teaspoon instant coffee granules

1/4 cup milk

2 tablespoons coffee

1 (3 ounce) can sliced marshmallows

1/4 cup butter flavored shortening

1 cup heavy whipping cream

Directions

In a medium bowl, mix cream cheese, sugar, eggs, vanilla, and vanilla extract. Mix well. Beat in coffee and marshmallows. Fold in butter. Spread mixture into a 9x13 inch pan.

Beat whipping cream until stiff. Spoon mixture into cream cheese layer. Cover and refrigerate undisturbed. Refrigerate in refrigerator.

I followed the recipe exactly making no changes and these were amazing! They were rich, creamy, and flavorful. I made about half the recipe and half of the salad in one day. Everything was so simple but I did add fresh garlic and onion powder as well as fresh cilantro. I think next time I will leave out the lemon juice but for now it was a great way to try out a new recipe before I gave it a real try. I will be making this again!

This recipe was very good but needed a bit more kick. I served it topped with fresh asparagus and rainbow brussel sprouts. Not bad but very good.
