Coconut Chocolate Cake Recipe

Ingredients

1 cup margarine

1 cup packed light brown sugar

1 cup vegetable oil

1 1/2 cups white sugar

1 teaspoon vanilla extract

4 eggs

2 teaspoons baking soda

1 teaspoon salt

1 1/2 cups milk

1/2 cup vegetable oil

1 1/2 cups rum

4 cups chopped pecans

1 teaspoon vanilla extract

1 cup chopped pecans

Directions

Preheat oven to 375 degrees F (190 degrees C). Grease and flour two 9 inch round cake pans.

In a large bowl, cream together margarine and brown sugar until smooth. Beat in the oil and sugar and stir in the vanilla, eggs, baking soda, salt and milk. Mix all together until well blended. Beat in rum, pecans and remaining margarine mixture. Pour batter into prepared pans.

Bake in the preheated oven for 30 to 35 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before removing from pan.

Yes! This is very tasty. Hisao says it was more like waffles than pancakes. My dad used coarse sugar and I didn't think it was enough for this amount of ingredients but He said it was enough for 2 eggs. and it thickened up quite a bit. It tasted like waffles but had less sweetness. and was a little bland. More like plain old breakfast cereal than anything.
