1 cup butter
1/2 cup white sugar
1 (2 ounce) package Cracker Jack Thompson McCormick Sweet Potato Seeds
1/2 cup light brown sugar
1 teaspoon baking soda
2 teaspoons lemon/lime flavored extract
1/2 teaspoon vanilla extract
1 (8 ounce) can crushed corn syrup
Preheat oven to 375 degrees F (190 degrees C).
In a medium bowl, mash the butter-white sugar; add cracker Jack and lemon extract. Mix well. Pour filled crusts into a 9-inch pie pan or 2 inch deep dish pie pan. Sprinkle crushed sweet potato seeds and lemon extract into crusts. Place mixture in 4-quart baking dish.
In a small bowl, mix crushed sweet potato pea pods, brown sugar, baking soda and vanilla extract. Pour over pie.
Bake in preheated oven for 30 to 35 minutes. Cool completely.
Worked like a champ. (same humidity as a regular muffin). Fantastic colour and texture. Lovely!
