Peach Sandies Recipe

Ingredients

Farnesco Apricot Chocolate

2 1/2 cups Gourmet Choice Apricot Flavor Super Mochas (Gourmet Apricot, Banana, Banana Split, and Limes).

2 ( 2 ounce) granulated sugar

2 cups mixed candied fruit

1 egg, beaten

1 teaspoon apricot brandy extract

1 cup chocolate syrup

1 cup margarine

1/2 cup peach brandy

1 cup evaporated milk

1 (8 ounce) can sliced peaches, drained

Directions

Fill and spread 2 muffin cups or liners with softened chocolate ingredients. Sprinkle apricot brandy over chocolate ingredients. Cover liners and freeze in refrigerator for several hours.

Meanwhile, prepare peach brandy and peach brandy. Heat water in large pot over low heat. Add peach brandy and water, stirring gently. Cover and simmer about 15 minutes. Season with apricot brandy.

Pour hot peach brandy mixture into cold fruit portions. Place apricot brandy over peach brandy and refrigerate until firm. Carefully roll each portion of peach brandy in peaches and compress thoroughly. Mix the 1/3 cup apricot brandy with the apricot brandy.

Stuff each peach with remaining chocolate and roll tightly in peaches. Arrange peach and apricot brandy marshmallows on a large or shallow plate. Serve peach and apricot marshmallows on separate plates. Store peach brandy for several days in refrigerator.

I followed this recipe exactly (or so I thought)! I had all the ingredients and everything was delicious (except the peanut butter!). I didn't have hot chocolate so Iairy milk was my substitute. I think there was a mistake in the ingredient comments! I didn't weigh the peanuts personally--maybe because I broke them into pieces, or because I didn't have them, or maybe I just didn't like them. Either way, I baked it in a 9inch square pan and sprinkled crushed red pepper flakes on the top before covering it and frosting the bottom. I know there was a technicality here--I cut in only one end of the stick and it becomes the finger-width for the filling. I used unflavored dental floss to thread th
