1 (2 ounce) package taco seasoning mix
1/4 cup chopped onion
1 (5 ounce) can refried beans
1 (2.25 ounce) package taco meat taco seasoning mix
1 (1 ounce) package shredded Monterey Jack cheese
1 (16 ounce) can refried beans with salsa
1/4 cup chopped green bell pepper
1/4 cup chopped green bell pepper
1/4 cup chopped red bell pepper
1/4 cup chopped red bell pepper
1/4 cup chopped green bell pepper
1/4 cup chopped red bell pepper
In a medium bowl, mix taco seasoning, onion, refried beans, taco meat, cheese, Monterey Jack cheese, refried beans, salsa, green pepper, bell pepper and red bell pepper. Shape mixture into 1/2 inch balls. Wrap in plastic or aluminum foil and refrigerate overnight.
After the casserole has cooled, refrigerate the remaining refried beans and the cheese in a medium bowl. Cover and refrigerate overnight.
Preheat grill for high heat.
Place meatballs on the prepared grill and grill until well done, about 5 minutes. Remove from grill and allow to cool completely.
