2 teaspoons vanilla extract
1/2 cup white sugar
1 1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon salt
1 cup yellow cake mix
3 eggs
2 teaspoons lemon juice
2 teaspoons orange juice
2 teaspoons lemon zest
Preheat oven to 325 degrees F (165 degrees C). Sift together the flour and sugar. Set aside.
In a large bowl, beat eggs and sugar together. Stir in flour mixture along with lemon juice and orange juice. Fold in lemon zest. Set aside.
Sift together the flour mixture and lukewarm lemon juice and orange juice mix until smooth. Gradually beat egg mixture into flour mixture, beating well after each additions. Pour batter into prepared cookie sheet.
Bake in the preheated oven for 8 to 10 minutes, or until a toothpick inserted into the center of the cookie comes out clean. Allow cookies to cool on baking sheet for 5 minutes. Cool completely on wire rack.
