1 cup white sugar
1 egg
1 teaspoon vanilla extract
2 1/2 cups vegetable oil
2 1/2 cups apple juice
4 cherry blossoms
3 eggs
1/2 teaspoon almond extract
1 cup sliced almonds
Preheat the oven to 350 degrees F (175 degrees C). Grease and flour 2 (9 inch) pans.
In a large container, beat the sugar until smooth, then beat in the egg and extract until well blended. Stir in the oil. Stir the apple juice into a 2 litre container. Pour peach wedges onto each sheet and let cool slightly.
Using a wooden spoon, spread 1 cup of fruit into the bottom of each prepared pan. Spread the orange wedges over the fruit. Brush cherry onto the top. Layer with apple slices (use in filling to moisten the cake), almonds and almonds. Place over the fruit.
Bake in the preheated oven for 20 to 25 minutes, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely before frosting with orange gel.
