2 (3 ounce) packages cream cheese
2 bananas, sliced
1/4 cup brown sugar
1/2 teaspoon ground cinnamon
1 teaspoon vanilla extract
1 cup mashed sweet potatoes
2 tablespoons lemon juice
In a medium bowl, whip cream cheese until light and fluffy. Beat in bananas, 1/4 cup brown sugar and cinnamon. Mix in vanilla. Make a well in the center of all but 3 tablespoons of the cream cheese and continue whipping until all mixture is incorporated. Shape into a 3/4 inch circle. Place onto empty baking sheets.
Bake in preheated 350 degrees F (175 degrees C) oven for 1 hour or until crisply set. Cool completely before removing from pan.
Assemble the the Chip Cake: Make the caramel topping by mixing together lemon juice and orange juice. Mix together sugar and cream cheese.
