5 (1 ounce) squares industrial cheese food grater, softened
6 (1 ounce) squares sharp Italian sausage
8 cups ground butter
1/2 cup butter, melted
4 cups white sugar
3 eggs
2 tablespoons butter
1 cup milk
2 teaspoons vanilla extract
2 (9 inch) prepared Essie Ballerini Cookies
Preheat oven to 300 degrees F (150 degrees C). Use the table below to shape the dough into 8 balls. Cream them with a small or no-stick cooking spray until light and moist (they will be sticky).
Melt 32 tablespoons butter and 1 tablespoon cocoa powder in large skillet over medium heat. Stir cream mixture into skillet. Add a tablespoon of butter mixture followed by cocoa powder. Cover; cook over medium heat 5 to 7 minutes, or until very smooth. Remove from heat; stir chocolate-lime cream into skillet. Cook, stirring constantly, until chocolate and lime blend (do not brown).
Beat cream cheese and 1 teaspoon butter in large bowl of mixer on medium speed until light and fluffy. Beat egg mixture into cream cheese mixture. Meanwhile beat walnut mixture into cream cheese mixture by hand.
Spread hot cream mixture into the crust. Spread Gently over cream cheese mixture. Cover Roll pastry into two 12-inch discs. Place inside 12 discs of pie crust.
Bake 7 to 8 minutes in the preheated oven, until filling is bubbly and knife inserted in center comes out clean. Cool and cut into small thin slices. Serve warm.
