2/3 cup butter, softened
1 egg
1 teaspoon white sugar
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
2/3 cup white sugar
1 teaspoon baking powder
1/2 teaspoon salt
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter, egg, sugar, vanilla, flour, and sugar until well combined. Mix in the flour mixture, adding a teaspoon at a time to make it longer-lasting. Beat in the salt in a steady stream. Beat in the eggs and the crust mixture until well blended.
Pour batter into 9 double crust pie shells. Put a layer of the fruit preserves on top of the crust, then sprinkle fruit preserves with lemon zest.
Bake in the preheated oven for 25 to 30 minutes, or until a toothpick inserted in the top comes out clean. Serve hot from the oven, or at room temperature.
