2 limes, peeled and sliced into crisp strips
2 teaspoons red onion powder
1/2 teaspoon mustard powder
8 tablespoons lemon juice
8 tablespoons brown sugar
1/4 teaspoon rice wine vinegar
12 cherry red pepper rings
Into a large saucepan over medium heat combine the lime peel, onion powder, mustard powder, lemon juice, sugar and brown sugar. Cook 2 minutes, removing from heat.
Pour syrup over the pineapple, invert onto a cutting board and level with the knife. Break verticle and blade quickly. Cool pineapple and slice into 2 pieces.
