Veal Terrine Recipe

Ingredients

1 cup caster sugar

1/4 cup white sugar

2 teaspoons instant vanilla extract

1 1/2 teaspoons lemon extract

1 1/2 teaspoons vanilla extract

1 1/2 teaspoons lemon juice

1 (20 ounce) can whole peeled tomatoes with juice

1/4 cup all-purpose flour

Directions

Spread sugar evenly in two 9-inch square panbes. Use the palm of your hand to smush the sugar into the bottom of the pan. Pour tomato mixture over the sugar layer. Cover with foil and chill.

Combine vanilla, lemon extract, lemon juice and flour. Stir until smooth. Pour sauce over meat. Refrigerate for at least 2 hours.

Preheat oven to 400 degrees F (200 degrees C).

Cook meat in preheated oven on one side for 5 to 7 minutes per side. Turn and cook on other side for 2 to 3 minutes per side. Remove foil and brown on both sides. Place in oven.

Remove foil and brown meat on both sides. Remove meat from pan and discard bones. Discard discards. Layer meat with tomato mixture and bread pudding. Spread mixture over meat. Top with vegetables. Decorate with fruit by sprinkling over meat.

Place pan in metal foil pan with lid so that top of pan can be partially covered. Place pan on rack of oven and place and read thermometer on center of pan. Loosen foil and sprinkle with lemon zest. Remove foil. Bake for 10 to 12 minutes per side. Turn and continue baking for an additional 4 minutes. Remove foil and continue baking for an additional 2 minutes.
