1 red onion, chopped
1 avocado, peeled, pitted, and sliced
1/2 cup shredded Cheddar cheese
1/4 cup banana yogurt
1/4 cup low-fat mayonnaise
1/2 teaspoon garlic powder
In a medium bowl, combine onion, avocado and Cheddar cheese. Mix well, then transfer to a medium, dish-sized mixing bowl. Cover with banana yogurt.
When pudding or hard boiled eggs have reached desired heights in the dish or bowl, turn off the heat and pour in chicken broth. Broil 10 minutes. Remove from heat and stir pudding or eggs back into mixture until all is well combined.
Puree cooked chicken, curry powder and remaining 4 tablespoons of soup mixture into hot milk/water. Add egg replacer, if desired, and continue to heat until thick enough to coat the back of a spoon (no more than to almost burn). Remove from heat. Stir in Cucumber and serve immediately.
