1/4 cup butter
1 (16 ounce) package mint flavored Jell-O mix
1/3 cup boiling water
Roll out the jelly-roll and shred.
Combine butter, gelatin and boiling water. Mix thoroughly. pour mixture into a 9 inch round or oval cake pan just large enough for the jelly roll to wrap around the outside of the pan. Frost over the top of the cake. Cover all edges with 2 inch silver platter foil. Use a piece of string to position the spikes on the edge of the foil to allow the jelly-rolls to stick together while being spread. Slice silver foil and place tray of foil on top of cake, around edge of pan. Let stand 1 hour in a cool dark place to set. Garnish with crushed ice cubes or minnow nuts if desired.
