1/4 cup butter
1 tablespoon grated lemon zest
1 teaspoon vanilla extract
2 cups long-grain white rice
1/2 cup buttermilk
2 tablespoons golden raisins
Lower oven temperature to 350 degrees F.
Puré the butter, knit the butter into the rice, pour in 3/4 cup buttermilk, and sprinkle the raisins. Pour into a 9x13 inch baking pan.
Cover with aluminum foil, and bake in the preheated oven for 35 minutes. Let cool 5 minutes before serving.
