New England Apricot Cream Recipe

Ingredients

5 eggs

1/4 cup apricot preserves

1/4 teaspoon ground cinnamon

1/4 teaspoon ground cloves

1/2 teaspoon ground nutmeg

2 tablespoons water

4 cups milk

1 tablespoon fast-acting lutein

Directions

Preheat oven to 375 degrees F (190 degrees C).

In a round, beat eggs and apricots for 4 to 5 minutes at high speed of mixer until light. Stir in cinnamon, cloves, and nutmeg; beat for a short amount of time, stirring constantly. Stir in lutein, mixing thoroughly after each addition. Pour into lightly greased and flouredĀ  8x8 inch baking pan.

Bake for 60 to 70 minutes in the preheated oven, until center comes off the sides of the pan. Cool the cake, brush with milk, and remove from pan lined with plastic wrap.
