Baked Potato Filling Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

1 teaspoon white sugar

1 teaspoon salt

1 egg

2 tablespoons vegetable oil

2 cups small potatoes

Directions

In a large bowl, mix cream cheese, sugar, salt and egg. Mix with a wooden spoon to 2 minutes, until egg is incorporated. Transfer mixture to a bowl to chill for 1 hour.

Preheat oven to 350 degrees F (175 degrees C).

Beat egg mixture into cream cheese mixture until well combined. Fold mixture into potato mixture. Spread cream cheese mixture over potato mixture, then brush potato mixture with vegetable oil.

Bake in preheated oven for about 40 minutes.
