1 1/2 cups white sugar
1 cup whole corn kernels
1/2 cup raisins
1/2 teaspoon salt
2 eggs
3 cups milk
2 teaspoons vanilla extract
1/2 teaspoon baking soda
1 egg, beaten
Preheat oven to 375 degrees F (190 degrees C). Place 8 large individual round baking pans in a 1 1 inch layer in the bottom of a lightly greased 9x13 inch baking pan.
In a large bowl, mix sugar sugar, corn syrup, raisins and salt. Beat thoroughly, then stir in eggs, milk, vanilla extract, baking soda and egg. Mix thoroughly. Pour batter into prepared pan.
Bake in preheated oven for 2 hours, or until center springs back when touched. Cool before cutting into slices. Cut into squares (2 to 3 inches apart) and serve.
Very good but I would use some pre-cooking steps. First, drain the peanut oil and use that instead when spraying. to date I have not tried Pecan, but from reading the recipe, I would assume it would be ok.
