Peach Nigu Cookies

Ingredients

1 tablespoon unsalted butter

3 clear pitted peaches, pitted and sliced

1/2 cup butter or margarine, softened

3/4 cup white sugar

1 cup sour cream

1 pinch salt

1 cup heavy whipping cream

Directions

Preheat the oven to 450 degrees F (230 degrees C). Spread peaches over cookie sheets in 4 - 12 inch dia. circles, leaving cookies 8 inches apart.

Beat butter and sugar together in large bowl until fluffy. Stir flour mixture into butter mixture just until blended, then gradually blend in sour cream and salt. Mix whipped cream with lemon juice. Roll into balls and roll in orange zest. Arrange cookie sheets in a single layer on ungreased baking sheets or grease on 20x25 inch jelly rolls pan.

Bake in the preheated oven for 10 to 12 minutes, until golden brown. Remove from pan to wire rack and cool completely. Frost with Frozen Frosting in 7 (6 ounce) teaspoons mixer bowl. Serve chilled in 64 glass ice cube trays set in large 5 inch gelatin cups.
