1 (18.25 ounce) package white cake mix
2/3 cup water
1 cup white sugar
1/2 cup unsweetened cocoa powder
1/2 cup olive oil
4 eggs
4 teaspoons vanilla extract
2 cups rum
1 (8 ounce) can frozen lime wedges, thawed
1 cup shredded coconut
pineapple to garnish
Prepare and bake white cake mix according to package directions. In a large bowl, stir together water, sugar, cocoa, olive oil, eggs and vanilla extract. Beat on low speed until blended. Increase speed and add coconut. Cover and chill 1 hour before serving.
In a metal bowl, cream rum until light and fluffy. Stir in coconut and pineapple. To serve, invert and remove from the oven.
