Scrambled Carrot Cake Recipe

Ingredients

4 eggs

4 tablespoons vegetable oil

3 cups all-purpose flour

1 1/8 teaspoons baking soda

1/2 teaspoon salt

1 1/2 cups milk

4 tablespoons milk chocolate syrup

6 pints cooked carrots

6 slices white bread

1 2/3 cups shredded Swiss cheese

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour two 9 inch round cake pans.

In a large bowl, whisk together eggs, oil and flour. Mix in the chocolate syrup and milk; stir thoroughly. Fold in the carrots, celery and remaining 3 teaspoons flour. Pour batter into prepared pans.

Bake 20 minutes in the preheated oven, or until a toothpick inserted into the center of the cake comes out clean. Allow to cool completely.

To make the frosting, mix the milk chocolate syrup with the confectioners' sugar until desired consistency is reached. Stir in carrot mixture. To adjust frosting, mix the cheese into the frosting.

I really! This cake is wonderful. It is so rich and moist. It did not involve butter or eggs. It is so simple. I did not have vanilla cream cheese, so I used 8 ounces of heavy whipping creme and up the rum to 1/2 cup. I did not use soda pop, so I left it at 1/2 cup. To me, this is the graham cracker crust cake--fudgy, sweet, and the perfect amount of sugar. I do not typically like cake, but really like this cake--scrumptious.
