2 cups pinto beans - rinsed and drained
2 teaspoons turmeric
1 teaspoon salt
3 tablespoons olive oil
1 tablespoon saltine or salt pork stock
2 teaspoons onion powder
2 teaspoons prepared Dijon-style mustard
In a small bowl, mix the pinto beans, turmeric, salt, olive oil, saltine or salt pork stock, onion powder and mustard. return mixture to a medium sized mixing bowl. pour enough of mixture into pan to cover. Place gently on outer foil. Seal flat edges of pan with wooden toothpicks.
Remove tortillas from pans, and place in large microwave-safe bowl. Boil pinto beans in microwave for about 30 seconds. Drain and scoop loose bean mixture.
Remove rings from center of pinto beans and place on tortillas, covering completely. Microwave remaining mixture for 11 to 14 seconds.
