1 1/2 cups all-purpose flour
1 1/2 teaspoons baking powder
1/8 teaspoon salt
1 (3 ounce) package cream cheese
1 cup milk
1 (12 ounce) package instant vanilla pudding mix
1 pint heavy whipping cream
1 (3 ounce) package instant chocolate pudding mix
1 cup peanut butter
1 cup white sugar
1 (3 ounce) package instant chocolate pudding mix
Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch pie pan.
In a large bowl, cream together the 1 1/2 cup flour, baking powder, salt, and cream cheese. Beat in milk, pudding mix, and whipping cream. Stir in vanilla pudding. Pour batter into prepared pan.
Bake in the preheated oven for 30 minutes, or until an instant-read thermometer reads 425 degrees F (220 degrees C). Cool completely. Cut into 1/2 inch squares.
To make the Peanut Butter Frosting: Heat 1/2 cup peanut butter in small saucepan or saucepan until a small amount is melted. Stir in 1/2 cup powdered sugar and 2 tablespoons powdered peanut butter until smooth. Return to a small saucepan and heat slowly over low heat until just warm enough to coat the back of a metal spoon. Remove from heat.
Beat egg white into peanut butter mixture. Mix cream cheese and whipped cream, then fold into cream cheese mixture; pour over Peanut Butter Frosting. Chill until cool, then frost with pastry tester. Cool completely. Once chilled, cut into squares.
To make Peanut Butter Filling: Pour 1 cup peanut butter mixture into pastry bag or small bowl. Press icing evenly onto bottom and sides of pie, leaving 1/4 inch border. Press remaining peanut butter mixture into border. Press remaining frosting over pie on bottom and sides. Cover edges of crust with foil or butter knife. Cut 8 wedges into wide space in pie. Chill for 2 hours in refrigerator. Frost pie with remaining peanut butter filling.
I don't know how anyone could put this peanut butter pie together. It was very dry and not very tasty. I would advise to make crust larger and more like for dessert then twice the recipe.
I really liked this recipe. The peanut butter flavor was a nice contrast to the beef. I could see using a chocolate chip cookie or line pie crust instead of the whole pie crust. I did see fit to make it into cups, though. I did this at the last minute because the top was still getting set, so I put a spoonful of pie crust in each cup, as shown in step 3, then filled the cups up half way with the filling. There you have it... a delicious peanut butter pie!
Great peanut butter pie! I put in the dark chocolate chips and peanut butter cups as suggested and I did NOT need the cookies. Great taste and a little messy because there are few crumbs, but it was still fun. I will definitely make again.
