4 pounds Cajun seasoning
3 quarts water
1 tablespoon Worcestershire sauce
1 tablespoon Cajun seasoning
1 1/2 quarts milk
1/2 teaspoon salt
1 teaspoon garlic powder
1 teaspoon cayenne pepper
1/2 teaspoon hot pepper sauce
2 teaspoons seasoned salt
2 teaspoons black pepper
Place Cajun seasoning, water, Worcestershire sauce, Cajun seasoning, milk, salt, garlic powder, cayenne pepper and hot pepper sauce in large saucepan. Bring heat to rolling boil; cover, reduce heat to low, and simmer for about 20 minutes.
Sterilize large, 10 inch round pans well. Place meat in pans. Cover, and refrigerate overnight; let stand overnight.
In a large bowl, combine Cajun seasoning, 1 1/2 quarts milk, salt, garlic powder, cayenne pepper, hot pepper sauce, seasoned salt, black pepper and meat.
Preheat oven to 375 degrees F (190 degrees C). Lightly grease large baking sheet.
Place meat in prepared pans. Coat top of meat with olive oil, and press into pan 9/12 to 11 x 11 x 2 inches. Using a 2 1/2 to 3 quarter inch round tip, spoon 1/2 inch of meat around edges of pan. Stuff foil around middle of pan.
Bake uncovered for 1 hour in preheated oven.
