Coconut Cream Pie VIII Recipe

Ingredients

1 cup butter

1/2 cup white sugar

1 egg

1 teaspoon vanilla extract

1/2 teaspoon cream of coconut

1 (8 ounce) package cream cheese

1 (3 ounce) package instant vanilla pudding mix

8 ounces shredded Cheddar cheese

1 (4 ounce) can evaporated milk

1/2 teaspoon salt

1 cup chopped pecans

Directions

Preheat oven to 350 degrees F (175 degrees C). Line a 9 inch pie pan with foil.

In a large bowl, cream butter, sugar and egg until smooth. Beat in the vanilla. Stir cream cheese and pudding mix. Stir in coconut and cheese. Pour mixture into prepared pie pan.

Arrange pecans evenly over top of pie. Bake in preheated oven for 20 minutes or until toothpick inserted in center comes out clean. Cool completely before cutting into squares.
