4 egg whites
1/2 cup white sugar
1/4 teaspoon salt
1 tablespoon lemon juice
1/4 teaspoon lemon peel
1/4 teaspoon vanilla extract
3 cups evaporated milk
In a large bowl, whip egg whites until they reach soft peaks. Gradually add sugar and salt; continue to whip until whites form stiff peaks. Fold in lemon juice, lemon peel and vanilla. Spread jelly onto waxed paper.
I was born in the US, but both parents are China immigrants-- this recipe is perfect! The ingredients are perfect: simple, and easy to prepare. I used both steamed and raw veggies, along with extra garlic salt, and also maduro peppers. This ended up being one of the best sandwiches I've ever made, filling me up and motivating me to eat. It was so easy--I never had anything else to substitute for relish, so I improvised. I'll definitely make this again!
