1/2 cup butter
1 1/2 cups brown sugar
1/2 cup packed light brown sugar
1/2 cup white sugar
2 eggs
1 teaspoon vanilla extract
1 cup all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups brewed coffee
2 tablespoons ground cinnamon
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter, brown sugar, brown sugar and white sugar until smooth. Beat in the eggs and vanilla. Combine the flour, baking powder, baking soda and salt; stir into the creamed mixture. Mix in the coffee, cinnamon and vanilla until well blended. Drop by rounded spoonfuls onto ungreased cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, or until completely set. Allow cookies to cool on baking sheet for 5 minutes before removing to a wire rack to cool completely.
