1/3 cup margarine, melted
3/4 cup confectioners' sugar
1/4 cup maple syrup
1 cup light brown sugar
1 (16 ounce) package cream cheese, softened
1 cup powdered sugar
1 tablespoon lemon zest
1/2 teaspoon lemon zest
2 egg whites
1 tablespoon melted margarine
Preheat oven to 350 degrees F (175 degrees C). Dredge loaf in flour. Place cookies 1 inch apart onto ungreased cookie sheets.
Melt margarine in a medium-size saucepan over medium heat. Stir in evenly 2 cups margarine, powdered sugar, maple syrup, brown sugar, cream cheese and lemon zest. Bring to a slow, stirring over medium heat, simmer 1 minute, then pour into cookie sheets.
Bake for 20 to 25 minutes in the preheated oven, until a small amount of water comes out of the edges. Let cool in pan for a few minutes before removing from pan. Cool completely on wire rack. Drizzle icing, if desired. Top with cream cheese, lemon cream and lemon zest. Place on cookie sheets. Cool completely on wire rack.
