4 skinless, boneless chicken breast halves
1 jalapeno pepper, seeded and seeded
1/4 teaspoon poultry seasoning
1 onion, thinly sliced
1 large carrot, cut into 1/2-inch slices
2 tablespoons olive oil
1 small red bell pepper, seeded and cut into 1-inch slices
1/8 teaspoon salt
1/8 teaspoon chili powder
1/4 teaspoon chopped fresh oregano
1 dash hot pepper sauce
Preheat the oven to 375 degrees F (190 degrees C). Spread chicken evenly into a large baking dish. Season with jalapeno and poultry seasoning. Sprinkle chicken with onion, carrot slices, olive oil, bell pepper, salt, chili powder, oregano, and hot pepper sauce.
Bake at 375 degrees F (190 degrees C) for about 1 1 hour. Reduce heat to 400 degrees F (200 degrees C) and continue baking chicken until tender, about 40 minutes.
