Peaches in the Sun Pie Recipe

Ingredients

1 (8 ounce) package cream cheese, softened

2 tablespoons cornstarch

2 tablespoons brown sugar

1 1/4 cups white sugar

1 cup all-purpose flour

4 eggs

1 teaspoon lemon zest

1 teaspoon vanilla extract

Directions

Beat cream cheese, cornstarch, and brown sugar in medium bowl until smooth; stir in flour.

In a large bowl, beat eggs, lemon juice, and vanilla until well blended. Stir the cornstarch into the eggs, and mix in sugar. Fold in the flour in a steady stream. Spread the batter into the pan.

Bake in preheated oven for 15 to 18 minutes, or until a toothpick inserted into center of the pie comes out in a small center. Turn over, and continue baking until caramel color is brought out and sugar is absorbed. Cool completely before cutting into bars.

Good basic recipe. Easy to make and easy on the wallet. I did have a tin of Neapolitan Sauce (frank) but it was still very good. Trick: cook the quails in the batter first, then quickly add the cream and cheese when filling is almost done. Seems to work very well.
