1 cup butter
2 cups white sugar
1 teaspoon ground cinnamon
2 cups all-purpose flour
1 teaspoon baking powder
3 tablespoons honey
1 teaspoon vanilla extract
1 cup chopped pecans
6 eggs
1 (8 ounce) package instant vanilla pudding mix
1 cup cream cheese
3 tablespoons butter
3 tablespoons brown sugar
Preheat oven to 350 degrees F (175 degrees C).
In a large bowl, cream together the butter, sugar, cinnamon and flour. Beat in the honey, vanilla and pecans. Stir in the eggs, one at a time, mixing just until incorporated. Stir in the pudding mix and cream cheese. Add the butter mixture to the creamed mixture just until incorporated. Spread the dough evenly into the pan.
Bake in the preheated oven for 1 hour, or until a toothpick inserted into the center of the thickest part of the loaf comes out clean. Allow to cool completely.
To make the filling and frosting: In a medium bowl, cream together the cream cheese, butter, brown sugar and cinnamon. Stir in the pecans, and spread evenly over the chilled loaf.
