1/2 cup olive oil
1 large Italian sausage, casings removed
small red onions, chopped
1/4 cup chopped celery
1 teaspoon chopped fresh parsley
1/3 cup Italian, chopped (optional)
1/2 tablespoon dried oregano
2 cloves garlic, minced
1 and 1 tablespoon dried crushed red chile pepper
1 pinch salt
1 (8 ounce) package shredded mozzarella cheese
1/2 cup diced green onions
In a large saucepan, add olive oil and saute sausage in olive oil until browned. Remove sausage from pan; set aside.
In another large saucepan, add onion, celery, parsley, mozzarella cheese, green onions, oregano, garlic and red chiles pepper. Mix together.
Place sausage in a large pot with water to cover. Bring water to a boil. Cover pot and cook approximately 1 1 - 1 1/2 hours, until sausage has been pulled from water and liquid has been absorbed.
Remove from heat and let stand about 5 minutes. Drain grease from pan; stir sage into sausage mixture. Slowly cook about 1 minute more and spoon into prepared bowls.
