Peach and Cream Chocolate Cake Recipe

Ingredients

2 eggs

6 tablespoons margarine, softened

1 1/2 cups applesauce

1 cup white sugar

3 tablespoons lemon juice

3 tablespoons maraschino cherries

1 teaspoon vanilla extract

2 cups all-purpose flour for dusting

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9 inch springform pan.

In a large bowl, beat egg whites until foamy. In a small saucepan, combine margarine, applesauce, sugar, lemon juice, maraschino cherries and vanilla extract. Heat over medium heat to remove from heat. Stir gently until mixture is warm.

Additional lemon juice and 15 drops orange zest (optional) Stir lemon juice mixture into egg whites. Pour batter into prepared pan.

Bake in the preheated oven for 60 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan on wire rack for 10 minutes, then invert onto serving platter. When cool, frost with peach and cream frosting. Serve in a decorated wooden bowl. Garnish with whipped cream.
