1 egg
1/2 cup mint extract
2 tablespoons lemon juice
1 tablespoon strawberry jam
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets. Place egg in a small bowl. Mix fine and roll out to 1/4 inch thickness.
Use pastry blender or pastry bag to gently fold the egg into whipped cream. Pour into cookie sheets.
Bake for 8 to 10 minutes in the preheated oven, until firm. Remove from racks of cookie sheet to cool on wire racks. Cool completely.
