1/4 cup olive oil
1 onion, cut into 1/4 inch slices
1 medium head cabbage
4 jalapeno pepper, seeded and chopped
1/2 teaspoon salt
1 clove garlic, minced
2 teaspoons dried parsley
1/2 teaspoon dried oregano
1 dash ground black pepper
1/2 teaspoon dried basil
1 cup diced celery
1 tablespoon grated Parmesan cheese
1 tablespoon Worcestershire sauce
1 tablespoon soy sauce
2 pounds ham
1 dash hot pepper sauce
Heat olive oil in a large, heavy skillet over medium heat. Fry the onion slices until lightly browned. Set aside and add the cabbage and peppers. Fry until tender, about 15 minutes. Stir in the salt, garlic, parsley, oregano, pepper, celery, cheese, Worcestershire sauce, soy sauce and ham. Cook about 5 minutes, stirring constantly. Remove from heat and stir in the hot pepper sauce. Cover and simmer gently for 10 minutes.
