1/4 cup butter, softened
1 cup brown sugar
1 cup white sugar
1/2 cup vegetable oil
1 egg
1 teaspoon vanilla extract
1 (18.25 ounce) package Pecan Filling and Raisins Cookies
1 (18 ounce) can cherry pie filling
2 cups chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Prepare puff pastry.
In a large bowl, cream together the butter and brown sugar until light and fluffy. Beat in the sugar, olive oil and egg. Beat in the flour, then mix in the vanilla extract and pecans. Fold in the pecans. Shape dough into a 2 inch square. Place in the prepared pan.
Bake in the preheated oven for 35 to 40 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool completely before removing from pan. Serve warm.
