Cocoa Eggnog Pie Recipe


1 (8 ounce) bottle vanilla flavored vodka

1 (9 inch) prepared graham cracker crust

4 tablespoons white sugar

3 tablespoons orange zest

3 tablespoons fresh lemon juice

1 (16 ounce) can crushed pineapple with juices

In a blender, combine vodka and sugar. Blend until sugar is completely dissolved. Pour into the bottom of a 10 inch springform pan. Place the pie crust over the crushed pineapple and mix with lemon juice.

Fill the crust with crushed pineapple, mix with orange zest and mix with lime juice. Place granulated sugar in the middle. Fill all three layers with crushed sugar.

Bake in preheated oven for 25 minutes, or until toothpick inserted in center of pie comes out clean. Cool completely before cutting into 9 slices. Serve warm or cold. Garnish with lemon wedge or ice cream cone icing .
