1 skinless, boneless chicken breast, skin removed and cut into 4 inch cubes
2 teaspoons salt, divided
2 teaspoons dried oregano
3 cups water
1/4 cup chicken broth
In a saucepan bring water to a boil, and season chicken with salt and 1 teaspoon ground oregano. Reduce heat to medium- low. Cover, and simmer for 20 minutes.
Whisk in broth, then cook approximately 2 minutes.
