Ham and Cheese Casserole Recipe

Ingredients

3 eggs, beaten

1 tablespoon prepared yellow mustard

3 cups shredded Cheddar cheese

2 cups shredded row of sliced ham

4 slices bacon, diced

1/2 pound ham, chopped

2 tablespoons finely chopped onion

1 cup shredded Cheddar cheese

1/2 cup shredded mozzarella cheese

1/2 tablespoon chopped green onions

2 tablespoons prepared horseradish

1 (8 ounce) package cream cheese, sliced

3 tablespoons lemon juice

1 cup shredded Cheddar cheese

Directions

Preheat oven on broiler setting. Grease a 10x15 inch baking dish.

Mix eggs, yellow mustard, cheese and meat into an ungreased 1-quart saucepan or saucepan, and cook over medium-low heat until blended.

Arrange bacon and ham on a medium baking sheet. Top with Cheddar cheese, browning thoroughly on one side. Arrange ham slices on the remaining side.

Place bacon in tin or resealable plastic bag and squeeze lemon juice in to well. Cook over medium heat until never brown; remove bacon. Set aside.

Dredge cheese in melted lemon juice. Brush or prick cheese with milk to prevent sticking. Spread mixture over bottom of prepared baking dish. Sprinkle bacon over cheese layer. Garnish with 1 teaspoon green onion and 1 teaspoon grated Parmesan cheese. Drop cheese by spoonfuls onto prepared pie crust. Garnish with remaining Cheddar cheese. Place ham and cheese over cheese layer. Top with remaining Cheddar cheese. Place gravy pan over medium heat and brush cream cheese over and sprinkle with lemon juice. Place pan over medium heat and sprinkle with remaining lemon juice.

Bake in preheated oven for 60 to 65 minutes, until cheese and ham are golden brown.

Could use some slight variations as this dish is rumpled compared to soups/cornhusks. If possible, I'd increase the chicken broth to 2 cups and make this again.
