Vegetarian North American Pasta Salad Recipe

Ingredients

2 tomatoes, diced

1 medium onion, peeled and chopped

1 medium tomato, chopped

1 carrot, diced

1/4 cup chopped green bell pepper

1 medium carrot, diced

1/2 medium onion, chopped

1/4 medium tomato, diced

1 cup sliced green bell pepper

1/2 medium tomato, diced

1 cup halved radicchio or tomato paste

2 tablespoons marinara sauce

1/4 cup whole (or split) mushrooms, sliced

Directions

In a large bowl, toss tomatoes with onion, peppercorn, carrot, bell pepper, onion, tomato paste, marinara sauce or mushroom sauce. Cover and refrigerate for at least half an hour. Toss again, for about an hour. Serve hot or cold.

I followed this recipe exactly; I had all the ingredients and was preparing to make apricots, which I already had. I didn't know how to make them, so I went ahead and baked them in muffin cups. They turned out pretty well, but only because I didn't temper the sugar enough with the rest of the ingredients. I did, however, put the raisins in the refrigerator until I was ready to use them. I will make this again.
