1 (19 ounce) can evaporated milk, divided
1 cup nonfat milk
1 (8 ounce) package cream cheese
1/4 cup sugar
1 (3 ounce) package instant chocolate pudding mix
2 1/2 cups chopped pecans
In a medium bowl, mix the evaporated milk, nonfat milk, cream cheese, sugar, and pudding mix. Stir until well blended. Chill in refrigerator.
In a large bowl, beat the pecans until light brown. Place the cream cheese mixture into a small bowl, and beat until thickened. Cover and refrigerate to set.
Heat a small saucepan over medium heat. Blend the cream cheese mixture with a whisk until smooth. Fold in pecans. Refrigerate mixture in refrigerator until serving time.
