1/2 cup butter
2 tablespoons all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/3 cup light soy sauce
1 cup water
1 1/4 cups uncooked white rice
1 cup cooked, cubed chicken meat
1 onion, sliced into rings
1 (15 ounce) can black beans, rinsed
1 (15 ounce) can whole kernel corn, drained
1 (15 ounce) can pinto beans, drained
1/4 cup vegetable oil
1 cup water
Preheat oven broiler.
How to Make Beans: Heat butter and sugar in a large saucepan over low heat. Stir in flour, baking powder and salt, until smooth. Bring mixture to a full rolling boil. Reduce heat to low and stir in soy sauce and water until well blended. Return mixture to a boil, stirring constantly.
Bring a large pot of water to a boil. Add rice and stir. Continue to stir until mixture is thickened, about 5 minutes.
Reduce heat to medium heat.
Transfer browned rice mixture into the saucepan with chicken, onion, black beans, corn, pinto beans, vegetable oil and water. Bring mixture to a boil, stirring constantly. Boil, stirring constantly, for about 20 minutes, or until rice is tender. Drain broth, toss and serve hot.
