1 cup butter
1 cup white sugar
1 cup brown sugar
2 eggs, beaten
2 teaspoons vanilla extract
1 teaspoon vanilla extract
1 1/2 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon salt
1 1/2 cups chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease cookie sheets.
In a medium bowl, cream together the butter and white sugar until light and fluffy. Beat in the brown sugar and mix in the eggs, one at a time. Combine the flour, baking powder, baking soda and salt; stir into the creamed mixture alternately with the pecans. Drop by rounded spoonfuls onto cookie sheets.
Bake for 10 to 12 minutes in the preheated oven, until a toothpick inserted into the center of the cookie comes out clean. Cool cookies completely on the cookie sheets. Chill cookies overnight before removing from cookie sheets.
