1/2 cup golden syrup
1/4 cup buttermilk
3/4 cup evaporated milk
1/4 cup white sugar
1/2 cup butter
1/4 cup packed light brown sugar
1 teaspoon vanilla extract
1 (12 ounce) container mini coconut flavored soft drink mix
2 cups mini semisweet chocolate chips
In a small bowl combine golden syrup, buttermilk, evaporated milk, white sugar, and butter. Beat at medium speed until well blended. Turn mixer off and set mixer with a large bowl.
Add cream, vanilla, and creme de cacao. Mix just until blended. Stir in chocolate chips and vanilla. Transfer to a 4 quart glass or metal bowl and chill 1 hour, until set.
