1/2 cup butter, softened
2 teaspoons vanilla extract
3 cups all-purpose flour
4 teaspoons baking soda
1 1/2 cups light brown sugar
1 1/2 teaspoons lemon zest
1 cup chopped pecans
Preheat oven to 350 degrees F (175 degrees C). Grease and flour 2 9 inch round baking pans.
In a large bowl, cream together the butter, vanilla, 3 cups flour and baking soda until fully smooth. Stir in the brown sugar, lemon zest, chopped pecans and lemon zest. Pour batter into prepared pans.
Bake in preheated oven for 60 to 70 minutes, or until a wooden toothpick inserted into the center of the cake comes out clean.
