Pickle and Egg Recipe

Ingredients

1/2 cup potato starch

1/2 cup water

1/2 cup shortening

2 tablespoons vinegar

1 3/4 cups whole pickle, sliced

1/2 teaspoon garlic powder

3 pounds cooked lobster meat, chopped

Directions

Stir 1/2 cup potato starch into water. Cover and let cook 10 minutes, stirring if necessary.

Place shortening and vinegar in a small saucepan and cook over low heat, stirring occasionally, until thoroughly blended. Stirring regularly, cook until hot and sauce is thickened. Stirring occasionally, slowly add water. If mixture is too thick, add more water.

Repeat with remaining ingredients. Cook 9 to 13 minutes.

I made this recipe for a Christmas dinner, and it was quite good. I used a jar of Delish peanut butter, and I still had some to use up. I must say that I didn't follow the recipe, and used a jar of Simply peanut butter, because I didn't have the yellow onion that I ordered from spices. I used 2 lbs. of small red potatoes, and the recipe called for. I just made a simple soup with the reserved potatoes, and it was still yummy. Thanks for the recipe!

This was easy and turned out pretty good. I used the white bread crumbs from the fridge (thanks Siri!). I also substituted brown sugar for half the white sugar. Oh, and the cinnamon is awesome. I can't wait to bake this for the holidays!

I made this for a Christmas party, and it was quite good. I made no pickles, and only used peanut butter because I didn't have lemon peel, and I didn't have egg...I used a jar of good pickles, and it was still yummy. Next time I make it, I'll either add a little more vinegar or lemon juice, because the texture is a bit awkward. Oh, and I forgot to reserve part of the dressing (it was a bit crispier than I recall). Thanks, though. It was very tasty, and I wish I'd known to either omit the salt, or think about it and adjust the rest. I liked the finished product, and will make it again.
