Smoked Salmon with Olive Pesto Recipe

Ingredients

1 medium onion, finely chopped

1 medium carrot, thinly sliced

8 ounces fresh mushrooms, sliced

4 cloves garlic, finely chopped

4 pinches dried chilli peppers

1 tablespoon olive oil

1 tablespoon dried oregano

2 (15 ounce) cans black olives

I made this salmon and it was really easy. I always prefer a drizzled dish, sweeter and more flavorful, so I went with the raspberry vinaigrette. I didn't have pine nuts so I used sliced almonds instead and it was still super tasty.
