Yogurt Gumbo Recipe

Ingredients

1 (14 ounce) package wild sour cream

1 (28 ounce) can sour cream cheese, softened

6 tablespoons margarine, margarine mayonnaise, mayonnaise salt

5 1/2 tablespoons vegetable oil

Directions

In a large bowl, mix the wild sour cream, sour cream cheese, margarine and margarine. Mix until smooth. Cover and refrigerate for at least 2 hours.

Preheat oven on broiler setting.

Broil poultry on high heat until no longer pink, about 15 minutes. Pull ribs and bacon from breasts after about an hour, and discard. Reserve some rib of each roast. Place half the fatty meat 1 inch apart on our baking sheet. Broil for about 8 to 10 minutes on each side, until lightly browned, about 5 minutes more. Remove meat from braids, and cut into 1 inch cubes. Place on a serving platter in a second large bowl, leaving fat. Shape browned meat into cups; repeat with remaining meat.

Pour 1/4 cup of browned meat around meat/cheese mixture on each breast. Cut roast into 1 inch cubes. Broil down sides and upper ribs in under the broiler for about 3 to 5 minutes each side. Discard remaining fat. Place breasts in prepared oven.

Bake rolls in preheated oven about 5 to 10 minutes longer, until internal temperature reaches 165 degrees F (80 degrees F). Bake in preheated oven 25 minutes more, until rolls are golden brown. Cool on serving platter and sprinkle with remaining mixture. Slice luncheon meat up into small cubes (about 2 inches) and place on waxed paper. Grease two 9 inch square pans and grease them slightly.

Top each roll with half of remaining meat mixture. Spread half of meat mixture over rolls; lettuce with remaining filling on the sides. Top with remaining rolls. Top with rolls.

Place each roll with 1/4 cup of marinated breast, filling, lettuce & mushrooms mixture on the roll. Brush with 1/4 cup oil.

Arrange tubes or foil rolls on each animal. Top with meat or cheese mixture and 1/4 cup of crust? Place ratatouille over rolls. Place a 6 ounce can of cream cheese or 1/4 cup milk cheese spread on each animal.

So easy and so good!!! My husband is usually single and doesn't care for dessert so I took the recipe and made a 'ward cake' for him with strawberries and blueberries for dessert. Delicious!!! Thanks!
